Ingredients:
1 1/2 cups dried grated coconut
1 cup evaporated skim milk
4 serving slices of any white-meat fish (snapper, bass, etc)
1/2 teaspoon salt

Recipe:
1. Combine the coconut and the milk in a saucepan and bring to a boil.
2. Remove from heat and soak for 30 minutes.
3. Press all the liquid from the coconut and discard the pulp.
4. Place fish slices in a greased baking dish; sprinkle with salt, and pour over the coconut liquid.
5. Bake in a 350 F/175 C oven for 40 minutes.
