STUFFED CABBAGE

Ingredients:
1 tender cabbage (about 3 pounds/1 1/2kg)
2 eggs or equivalent egg substitute
1 cup chopped cooked spinach
1 Tbs. chopped parsley
1 cup grated Parmesan cheese
1 1/2 cups ground raw almonds
3 Tbs. olive or canola oil
Recipe:
1. Boil whole cabbage in salted water for about 5 minutes; drain thoroughly.
2. Beat eggs in a bowl; add spinach, parsley, cheese and almonds.
3. Spread leaves carefully; insert some of stuffing in center of leaves until all is used. Close by tying with string around cabbage to prevent stuffing from falling out.
4. Put in baking dish and add oil.
5. Bake in a 375 F/190 C oven for 30 minutes or until cabbage is tender. Add 1/2 cup water if pan is dry.
