FETA AND TOMATO SALAD

Ingredients:
2 Tbs. olive oil
1/2 tsp. salt
1 Tbs. chopped fresh basil leaves
1/2 tsp. dried oregano
4 medium tomatoes, cut into bite-size pieces
1 medium cucumber, peeled and sliced
1 small onion, thinly sliced
1/4 cup coarsely chopped purslane
1 small green bell pepper, sliced thinly
15 Kalamata olives
3 oz. feta cheese, crumbled
Recipe:
1. In a small bowl, combine oil, salt, basil and oregano; whip with fork until slightly thick.
2. In a large bowl, combine remaining ingredients.
3. Pour dressing into vegetables, toss lightly and serve.
