CHICKEN CURRY CREAM SALAD

Ingredients:
2 cups diced cooked chicken
Heart of lettuce, shredded
2 medium tomatoes, peeled and chopped

Curry Cream Dressing:
2 tablespoons vinegar
1/2-1 teaspoon curry powder
1/2 cup plain nonfat yogurt
1 teaspoon French mustard
1/2 teaspoon salt
Dash of cayenne pepper

Garnish:
Lettuce leaves
2 hard-boiled eggs
Recipe:
1. Mix cold chicken pieces with heart of lettuce and chopped tomatoes.
2 Mix dressing ingredients in blender or food processor until creamy and smooth.
3. Pour dressing over salad and mix well together.
4. Place salad in dish and decorate with crisp lettuce leaves and slices of hard-boiled egg.
