FISH ROE SALAD

Ingredients:
1 ounce/28g fish roe paste (found in delicatessen shops)
8-ounce/200g container low-fat cottage cheese (1% fat)
3 Tbs. olive oil
3 Tbs. finely chopped fresh chives
Juice of 1 lemon
Lettuce leaves
Recipe:
1. Blend fish roe paste with cheese and olive oil in a blender or food processor until creamy and smooth.
2. Add lemon juice and blend again.
3. Add chives and stir well. Chill.
Serves:
1 cup
Notes:
Serving suggestion: Garnish with chopped parsley and grated lemon rind. When you first make this dish use a small quantity fish paste (less than 1 ounce/28g) as it has a very strong taste. If you like a sharper taste you can always use more paste.
