SHRIMP SALAD

Ingredients:
2 cups cooked shrimp
1 hard-boiled egg, chopped
1 tablespoon chopped parsley
1 teaspoon chopped fresh tarragon
1 tablespoon capers
1 tablespoon lemon juice
1/8 teaspoon pepper
1 tablespoon Low-fat Mayonnaise
Recipe:
1. Mix shrimp, egg, parsley, tarragon and capers.
2. Sprinkle with a little lemon, season with pepper and finish with a tablespoon of Low-fat Mayonnaise.
3. Mix well together and serve.

Serving suggestion Very good served on crisp greens garnished with lemon slices and capers.
