SEA-FOOD CHOWDER

Ingredients:
1/4 cup finely chopped onion
1 Tbs. olive oil
3 cans (5 ounces/150g each) clams, lobster or other sea food
2 cups water
4 cups skim milk (zero fat)
1/2 tsp. salt
1/8 tsp. pepper
Recipe:
1. Cook onion in a frying pan with a little oil until golden. Remove from heat.
2 Drain seafood and rinse well to remove excess salt.
3. Heat milk in a saucepan.
4. Mince seafood with a knife and add to milk mixture.
5. Add onion to saucepan and simmer for a few minutes. Serve hot.
