MUSHROOMS IN WINE

Ingredients:
1 pound/450g fresh mushrooms
3 Tbs. olive oil
2 large onions, finely sliced
2 wine glasses white wine
1 Tbs. chopped parsley
Salt and pepper
Recipe:
1. Trim the mushrooms, wash and cut in thick slices.
2. Heat the oil in a pan.
3. Add the mushrooms, saute over a quick heat for 1-2 minutes then remove from pan.
4. Reduce the heat, add the onions to pan and cook slowly until soft but not coloured.
5. Tip on the white wine, add the spices and simmer until wine is reduced by half.
6. Return the mushrooms to pan, season with salt and pepper and simmer for 5 minutes.
7. Pour mushroom mixture into a serving dish and dust with parsley.

Notes:
Serving suggestion A delicious side-dish for any beef dish. Very good as a light main-course meal served with Flourless Bread and a salad. Fat content: Each serving has 10g of monounsaturated fat.
