CELERY AND PIMENTOS

Ingredients:
3 celery hearts
1 Tbs. chopped green pepper
2 Tbs. olive oil
1 cup water
1/2 vegetable bouillon cube
1/2 cup dry white wine
1 small jar pimentos, cut into strips
Recipe:
1. Wash celery and split lengthwise.
2. Saute celery and green pepper in oil, turning celery gently.
3. Add water, vegetable bouillon cube and wine.
4. Cover and cook over low heat until celery is tender-crisp.
5. Remove celery and keep warm in oven.
6. Reduce sauce until it has a glazed appearance.
7. Pour it over the celery.
8. Garnish with strips of pimiento.

Notes:
Serving suggestion: A delicious side-dish for grilled meat dishes. Alternatively, serve as a light main course with Flourless Bread ,cheese and a tossed greens salad. Fat content: Each serving has about 6g of heart-healthy monounsaturated fat.
