Ingredients:
2 tablespoons olive oil
3/4 cup chopped celery
1 cup chopped onion
2 garlic cloves, minced
2 cans (14-ounce/400g each) chopped tomatoes
3 tablespoons tomato concentrate
2 tablespoons finely chopped fresh basil
1/4 teaspoon paprika
Salt and pepper
1/2 cup grated Parmesan cheese

Recipe:
1. Heat oil in deep skillet, and saute the onion and celery until soft.
2. Add the garlic, tomatoes, tomato concentrate and basil.
3. Cook uncovered until liquid is reduced and mixture is a thick puree.
4. Add paprika and season.
5. Top with grated Parmesan cheese.
