STIR-FRY VEGETABLES

Ingredients:
3 Tbs. olive or canola oil
1/2 cup bean sprouts
1/2 cup shredded spinach
1/2 cup chopped fresh mushrooms
1/2 cup sliced red, green and yellow bell pepper
1/2 cup thinly sliced zucchini
1/2 cup chopped spring onions
1 Tbs. pine-nuts
1 Tbs. soy sauce
1/4 tsp. ginger powder
Recipe:
1. Using a wok or skillet, stir-fry the vegetables and pine nut in hot oil for 2-3 minutes.
2. Add the soy sauce and ginger powder and mix well.
